Chemical and microbiological quality and contaminations, techniques and analytical procedures for assessing and monitoring chemical and microbiological water quality; water and wastewater quality standards, pollution prevention strategies and policies; risk analysis; asset management.

Study of nutrition and its application to physical activity and health. Macro- and micronutrient classification and recommended daily intakes, their digestion, functions in the body and their role in supporting physical activity and health will be discussed. A foundation course dealing with legal problems common to the management of natural resources such as fisheries, mines and minerals, petroleum, forests, and water resources.

The seminar explores foundational texts and treaties in international human rights, international humanitarian and international criminal law necessary to undertake the IJHR Clinic case and project work in the Fall and Spring Practicum.

Managed systems and concepts of sustainability; economic, ecological and social components; managed landscapes, agri-food systems, and communities; urban and rural systems; the land, food, nutrition and human health continuum.

Field studies carried out abroad under the direction of the instructor. Students will be guided to apply selected tools for analysis of agricultural and natural resource policy in developing countries with input from local policymakers. Design, analysis, recommendation or implementation of solutions in response to a food sustainability issue faced by community partners. Emphasis is on professional communication, leadership development, project management and decision-making skills.
