In the European Union, calls have been made to reduce food waste at retail. Eggs in Europe can only be sold in the first three weeks post lay. As a result, the European Commission requested a risk assessment of the impact of an extension of the shelf life of eggs on the rate of egg borne diseases. This presentation will summarise the outcome of the risk assessment, which focused on Salmonella Enteritidis as the main pathogen linked to eggs.
