WHY SUSTAINABLE CATERING?

UBC – Vancouver’s campus caterers (Wescadia, Sage, AMS Catering and Peake of Catering at Robson Square) all offer sustainable catering options. From Fair Trade certified coffee and Oceanwise certified seafood, to local produce and waste reduction initiatives, UBC’s caterers are leading the way.

Showcasing sustainable catering at your meeting or event will send a strong message to your colleagues and peers that sustainability is a priority for your department.

HOW CAN MY DEPARTMENT INCLUDE SUSTAINABLE CATERING OPTIONS AT OUR EVENT?

Ask!

• UBC’s caterers are working hard to integrate sustainable practices into their services and are open to your requests. Describe what you have in mind for your meeting or event and talk directly with your caterer. Download the Sustainable Catering checklist to learn more about sustainable food products and services offered by Wescadia, Sage, AMS Catering and Peake of Catering at UBC (this list is on the second page).

Make specific sustainability requests to your caterer by phone, email or online (forms usually have a special request section). Here are some common requests:

• Ask for milk/cream, sugar, honey and condiments to come in bulk, rather than in individualized containers.
• Request non-disposable dishware and cutlery whenever possible and if unavailable, ask for compostable plates, cutlery and cups if non-disposable is not an option.
• Go bottle free – request pitchers of tap water instead.
• Ask how food and other waste can be composted or recycled after your event. With Wescadia, for instance, you can order a tri-bin to be dropped off at your event. Peake of Catering also composts all food waste after every catered event.
